Tonight's dinner.....savoy cabbage with onions and cannelli beans and skinless chicken strips with sauteed portabella mushrooms.....YUM!

Baking Time

Well, I made my pizzelles, five cranberry breads and I have about 9 more in the oven now.....made my chocolate chip cookies, my white mice and I will be baking my rugelach, my pecan cups and tarralucci this week.  I may make sand tarts also...depends on how much time I have.  I do some of my baking down at the shore on weekends.....love my new oven!

Fresh Roasted Veggies

Didn't take a picture, but tonight I made Roasted Veggies using fresh Zucchini and fresh Yellow Squash (from Kate's garden), Orgainic red peppers and Vidalia Onions - Yum!  Cut them all in 1/4" slices or chunks, threw them all in a large bowl.....drizzled with EVOO, salt, pepper and garlic powder.  Placed them on a large cookie sheet covered with parchment paper and baked in the oven at 425 degrees for about 1 hour.....turning every 20 minutes. 
Served with Parmesan Crusted Tilapia......oh.....so good!!!!!!

What Dish?

Since I've been on the cookie diet mostly what I eat is either Fish, a salad and broccoli.....chicken, a salad and a green veggie......turkey or turkey burgers, etc., etc., etc. and maybe once every two weeks I will cheat and have lean beef with veggies.

I didn't think the dishes were too exciting to take pictures, so for now until I reach my goal, Dolly's Daily Dish will be boring.

Eating Healthy

There probably won't be any real fancy, different dishes that I post lately since I am on the Smart For Life Cookie Diet, but I will still take pictures of what I am eating and post them here and there.
I do eat a healthy meal at night, but very plain....no fats, etc.  I guess I will post some so you get the idea.

Fabulous Fish Sauce

Okay, after many tries (and failures) at making a great fish sauce for when I saute cod fish, tilapia, etc. I have finally discovered one that is FAB, and I don't have to make it.
As I was shopping for fresh shrimp at Giant last week, I came across two different sauces for fish, and thought I would give them a try.

Tonight I made cod fish and we topped it with this Lemon Peppercorn Sauce after it was in our plates.
Oh my...like I died and went to heaven. 
I think I will try it on other things too.....it is FAB!!!!!!!
You will find it right next to the Fresh Fish Department where they have tartar and cocktail sauces.
You must try it!!!

Shrimp Fried Rice

1 lbs. raw shrimp (peeled and deveined)
2 - 3 cooked brown rice (I used leftover rice)
3 T. Olive Oil
3 T. Lite Soy Sauce
1 Cup Peas (frozen - cooked) (I used leftovers)
1 Small onion (chopped)
1 Bunch Bok Choy (chopped)
1/2 C. Raw Mushrooms
2 Eggs

Rinse and dry shrimp and cut in half.  Saute onions and bok choy in olive oil on medium high heat, stirring constantly until wilted.  Add mushrooms and keep stirring.  Add shrimp and stir constantly.  Add rice and soy sauce along with salt and pepper to taste.  Once shrimp turn pink, add peas.  Beat two eggs and slowly fold them into the rice mixture.
Cooking time is about 10 - 15 minutes.  Leon and I gave this 5 stars.
This is a great, quick meal when you have leftovers.  Throw in whatever vegetables you like.  Very tasty!
